Green peanuts are peanuts that are harvested before they are fully mature, typically between 90 to 110 days old depending on the variety.  Our peanuts at Shelley Farms are fully mature around 140 days. Green peanuts also have a higher moisture content compared to dried peanuts, which gives them a different texture and flavor when cooked. 


 

Green peanuts are preferred for boiling over mature peanuts for several reasons:

  1. Moisture Content: Green peanuts are freshly harvested and have a higher moisture content compared to mature, dried peanuts. This makes them softer and more suitable for boiling, resulting in a tender texture.
  2. Flavor: The fresh, raw flavor of green peanuts is often considered superior for boiling. They absorb the flavors of the brine or seasoning more effectively, enhancing the overall taste.
  3. Cooking Time: Due to their higher moisture content, green peanuts cook faster than mature peanuts. This reduces the overall preparation time for boiled peanuts.
  4. Texture: Boiled green peanuts have a unique, creamy texture that is often preferred over the firmer texture of boiled mature peanuts.
  5. Nutritional Value: Green peanuts retain more of their natural nutrients since they are not dried or processed, offering a fresher and potentially more nutritious snack.


Runner peanuts are a type of peanut variety known for their uniform kernel size, which makes them ideal for processing, particularly in the production of peanut butter. They are one of the most commonly grown peanut types in the United States, especially in states like Georgia, Alabama, and Florida. Runner peanuts have a good flavor and are also used in snacks and confections. Their consistent size and shape make them a preferred choice for manufacturers looking for efficiency in processing and packaging.



 Valencia peanuts are sometimes preferred for boiling due to their sweetness, and Jumbo peanuts are larger and used in gourmet snacks.  Everyone has their own preference, but to us, there's a flavor runners have that you just don't get in the other varieties!


Unfortunately, they are not. Green peanuts are only available anywhere from July to November in most cases, we try to keep our website and Facebook page updated on when our season will start.    


 Green peanuts are typically not eaten raw due to their firm texture and earthy taste. Boiling is the most common preparation method.
